The Sasak people of Lombok have a number of traditional dishes for visitors to enjoy. The following is a brief rundown of some traditional Lombok delights.
Ayam Taliwang
Ayam Taliwang is Lombok’s take on the very popular Indonesian dish, ayam bakar or grilled chicken. Most places use ayam kampung or free range chicken. Ayam Taliwang is cooked while you wait over hot coals. Once the chicken begins to cook, it is briefly removed from the heat and dipped in a sauce made of chilli garlic and shrimp paste. Then its either grilled or fried to completion. The result is mouth-wateringly delicious. But be warned – this is one of the spicier dishes you will try in Indonesia! Rumah Makan Ayam Taliwang Dua Em is one of the most popular places to try this local dish.
Sate Rembiga
Again a spicy, Lombok style take on an Indonesian classic, Satay Rembiga takes its name from the Mataram suburb of Rembiga . There are plenty of less spicy satay options all over the city, however those who make the trip wont be disappointed.
Bebek Bakar / Goreng – Dakota Street
Why duck became so popular in Lombok is anyone’s guess. Maybe it’s because ducks are hardier and less prone to diseases that they found favour with local farmers. Whatever the reason, Lombok duck is both cheap and delicious and normally served fried or grilled over hot coals. A large number of restaurants that specialise in this dish are located a few minutes drive north of the city on Jalan Dakota. We recommend Pondok Galih as it’s the one we always go to.
Ikan Bakar – Pandanan Beach and Selong Belanak
An Indonesian specialty, best enjoyed on any one of Lomboks many amazing beaches, ikan bakar is fresh fish cooked over hot coals and served straight onto your plate. The bakar style is not confined to fish of course and many beach side warungs offer cumi (squid) and udang (prawn) at very reasonable prices.
